Iftar recipes: Treasure Balls

Treasure balls are made in three layers. They can be served as snacks or as starters. A perfect dish for Iftar; they are packed with several nutrients which are needed while fasting.

Ingredients
For outer layer
• 6 slices bread
• A handful of spinach
• 1 teaspoon cornflour
• Salt as per need

For middle layer
• 1 boiled potato, mashed
• 250g chicken breast, shredded
• 1 beetroot, steamed and pureed
• 1 teaspoon ginger paste
• 1 teaspoon garlic paste
• 1/2 teaspoon chilli powder
• 1/4 teaspoon garam masala
• 1/4 teaspoon mango powder
• Salt as required

For inner layer
• 8 quail eggs boiled, deshelled

Preparation
First we have to make the outer layer. For that crush bread slices in a mixer. Blanch spinach and grind it. Mix bread crumbs, spinach puree, cornflour, and salt. Make a soft dough with it and keep aside. Now prepare the middle layer. Mix all the ingredients mentioned for the middle layer and make the balls. Take a quail egg and cover it well with the potato, chicken, and beetroot mixture. We can approximately make 8 balls with it. Make lemon-size balls with the spinach, bread crumbs, and dough. Flatten it with hand. If it’s sticking you can apply little water. Now keep the chicken potato balls in the middle of the dough, and cover it. Repeat the process. Place a heavy-bottomed skillet on medium flame with oil for frying. Once the oil gets hot put the balls slowly into it. When one side gets cooked flip over. Remove the balls once it is brown in colour. Serve hot with tomato sauce or chilli sauce.
